Course Description:
Elevate your expertise in cheesemaking with the 2024 Advanced Cheesemaking Course at CalPoly. This immersive program offers comprehensive instruction on the fundamentals of milk and the cheesemaking processes, with a unique highlight – 2 days of hands-on experience in the CalPoly creamery.
Engage in the practical manufacture of farmer’s cheeses, Gouda, and Parmesan, gaining valuable insights into these specific varieties. Explore an array of global cheeses through an insightful overview, complemented by lab experiments, group activities, and sensory testing. Dive into enriching lectures covering plant standards, grading systems, and effective troubleshooting for defects.
A newly added section of the course focuses on the vital aspect of packaging options for specialty cheeses, providing a holistic perspective on the cheesemaking industry. Join us for an enriching blend of theory and practical application, designed to enhance your skills and knowledge in the art and science of advanced cheesemaking.

Dress Code:
- Casual, long pants required
- Closed toe and comfortable shoes
- Dress in layers (it can get chilly!)
- No jewelry allowed in creamery/pilot plant
- Gowns and hairnets will be provided

Industry (Individual): $850 per person
Industry (Multiple): $750 per person when registering 2 or more participants from the same company
Cal Poly Student: $250
Registration fees include course materials and daily parking pass.
